Missing the big snow + Recent Eats

When I said I was moving to Fargo, everyone warned me about the snow. Well, we are missing “THE BIG ONE”. Honestly, I feel a little bit left out. There’s something a little exciting about being snowed in with snacks and movies. While all of my friends and family in Michigan and Chicago and everywhere else in the midwest are buried in the blizzard, in Fargo, we are just frozen solid.

I am feeling slightly better tonight, good enough to at least post some food pics.

Monday Night was this spaghetti feast, made with ground turkey and served over whole wheat pasta. I love a husband who doesn’t complain when I make traditional foods just a little bit healthier. On the side we had roasted green beans and brocolli and some whole wheat garlic toast.

Last night I went to bed around 9. At 11, I still wasn’t asleep so my loving husband came into the bedroom with a dose of Nyquil. It knocked me out for the whole night. It might sound like he was being sweet, but really, he is just sick of me keeping him up at night while I whine, blow my nose and cry about how I’ve never had a sore throat this bad.

This morning, out of concern that I might be on cheese overload lately, I switched up my usual breakfast. Instead of an egg sammy I had a whole wheat bagel thin (they are SO good) topped with natural peanut butter and some Polaner raspberry all fruit spread. I love Polaner brand jams because they are 100% fruit, less calories, natural and even contain fiber.

My first day at work was fantastic. I am joining at a time when big projects are about to launch and great things are happening. The team I’m working with knows their stuff and I can tell I’m going to fit in just fine.

After work I came home to prep dinner before heading to the gym for a BODYPUMP class. My biceps are already sore.

Now, for the main event. Dinner! This is a recipe from Jessica at How Sweet Eats. It’s a healthy mexican cheesy chicken bake and it is magnificent.

I might have added a leeeeeeetle bit more cheese than it called for. And I added more salsa because I needed to work more veggies into my life for today.

I give Country Boy bigger servings than me so that I can eat it straight out of the pan when I'm finished with my serving. It just tastes better that way.

Now I’m onto my nightly ritual of throat tea, Nyquil, Aleve, cry, complain, blow my nose, etc. 

Actually, I’m going with positive thinking. I’m sure I will have a great night of sleep and wake up feeling refreshed with no sign of any throat issue.

I will be dreaming of my cheesy chicken bake leftovers.

    fargo has a windchill warning if that makes you feel better hearing that ups flint might be closed wed work hard stay warm love you guys
