The bad news is, I’ve been a bad blogger lately.
The good news is, I’ve been spending a lot of time trying to be a good employee, wife, cook, and workout queen. All of those are good, but I don’t want to neglect my little blog!
While I’m focusing on the things I’ve done well, I’d like to mention that I was very successful at eating a healthy breakfast for dinner tonight.
This morning, when I nearly emptied out the last of my peanut butter for breakfast, I decided to pre-soak some oats for an evening twist of overnight oats in a jar.
I took this jar. (Note the splatter of blackberry jam).
I added 3/4 cup of oats
Some golden ground flax meal that harvested right next door in Minnesota
Some pumpkin pie spice
And, some milk
Now, shake:
Shake:
Shake! You might just get a little tired. Especially if you are shaking your oats after an intense weights session.
I let my oats soak in the refrigerator all day long, and when I came home from work they were a creamy and cool peanut buttery treat. My best friend Colleen doesn’t like overnight oats, but I’m convinced she’s not making them right. : )
I paired my oats with egg whites, spinach and a Babybel cheese. It was a healthy and filling, breakfast for dinner. The perfect mix of savory and sweet.
Is there anything better than eating right out of a peanut butter jar? I don’t think so.
I’m cutting tonight a little short. I’m getting packed up for a work trip in the morning.

How do you make your soaked oats when you don’t have the empty PB jar? Also what is your oat to water/milk ratio?

I usually make them in a cute little glass container with a tupperware lid and let them soak overnight. I make sure to add peanut butter though. Another idea is canned pumpkin to make pumpkin pie oats! I just kinda eye-ball the milk I put in. But I’m always surprised how thick they get overnight, the oats really soak in the liquid!
